If the quantities are increased, the cooking time may be extended, so look again. Use water & spices sparingly at first and add more later if needed.
Mix the coconut milk powder with 3tbsp warm water and whisk until smooth.
Put the coconut into a cocktail shaker with the ice, pineapple juice and a squeeze of lime, shake until fully combined. Serve with the pineapple wedge on the side of the glass. If you have a really good blender you can throw all the ingredients into it to blend the mixture into a frozen cocktail!
