You don't see many recipes designed just for one - but here's one just for you! It's definitely a bit on the treaty side but its great for adding extra leftover or frozen veg to. Easy to make with our Maggi 3 Minute Chicken Noodles too.

This dish has been optimized for 1 servings. Quantity and times may need to be varied. Here you can find more information about adjusted portion sizes:
Cook the noodles in plain boiling water (keep the sachet of seasoning for use later), with the sweetcorn and peas for 3 minutes. Drain and rinse under cold water for 2 minutes, drain again.

In a frying pan, heat 1tsp oil and fry the spring onions and peppers for 3 minutes under tender. Add the milk and cream, seasoning sachet and tomato puree. Bubble for 2-3 minutes until the sauce thickens slightly.

Return the noodles and veg to the pan, heat through and add the cheese. Stir until combined and serve with coriander leaves on top!
