If the quantities are increased, the cooking time may be extended, so look again. Use water & spices sparingly at first and add more later if needed.
Cook noodles according to packet instructions; drain, rinse under cold water and reserve.
Grate or finely slice the courgettes and carrots. Heat a medium frying pan with oil, add chicken, carrot, courgette and cook for 4 minutes or until chicken is heated through.
Stir in reserved noodles, baby spinach, cottage cheese and the contents of flavour sachets. Cook for 1 minute, top with parmesan cheese and serve.
